Ingredients:
- 1 whole chicken, cut into pieces
- 4 large onions, thinly sliced
- 1/4 cup sumac
- 1/4 cup olive oil, plus extra for drizzling
- 1 teaspoon ground allspice
- Salt and black pepper to taste
- Flatbread (taboon or similar), for serving
Instructions:
- Marinate the Chicken:
- In a bowl, combine the chicken pieces with sumac, olive oil, ground allspice, salt, and black pepper.
- Massage the marinade into the chicken, ensuring it’s well coated. Allow it to marinate for at least 30 minutes or, ideally, refrigerate it for a few hours to let the flavors meld.
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Caramelize the Onions:
- In a large skillet, heat a couple of tablespoons of olive oil over medium heat.
- Add the thinly sliced onions and cook them slowly until they are soft and caramelized. This might take about 15-20 minutes.
- Cook the Chicken:
- In the same skillet with the caramelized onions, place the marinated chicken pieces.
- Sear the chicken on both sides until it gets a golden brown color.
